Oil-free and Oven-Baked Onion Rings

They are not just a vegan onion ring. They are crispy, tasty, and actually healthy vegan onion rings. Yes, they are oven-baked and oil-free.

The secret to these oven-baked onion rings is discovered.

First, presoaking of the onion rings. Since the onion rings are baked, this step helps soften that raw flavor, for a more mellow, sweeter baked onion ring.

Second, the power of Aquafaba. Yep, here it just seemed like the perfect fit. So, don’t skip the soaking and don’t skip the aquafaba.

Finally, the extra step of separating the breadcrumbs helps keep these oven-baked onion rings crispy. The 3-step coating takes a little bit of patience, but will be well worth it! Okay, enough talk. So, let’s start with preparation.

Ingredients for Oven-Baked Onion Rings
  • 1 large or 2 medium onions
  • 1/3 cup chickpea flour
  • Couple pinches kosher salt
  • 1/2 – 3/4 cup aquafaba (the liquid from a can of chickpeas)
  • 1 – 1 and a half cups fine breadcrumbs of choice,
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon smoked paprika or regular paprika (smoked paprika is much tastier)


First, slice onions into rings. Then place it in a bowl covered with ice-cold water and let soak for 1/2 hour. In a meantime prepare 2 baking sheets with parchment paper and preheat oven to 450 degrees. After soaking drain the rings and pat dry with paper towels.

Now you will need 3 bowls. Place the chickpea flour with the kosher salt in ziploc bag. Put the aquafaba in a bowl. Finally, combine the breadcrumbs, kosher salt, and smoked paprika in a second bowl. Once mixing through, transfer roughly half of this mixture to the third bowl. Coat the onion rings in three steps – first in the chickpea flour, then the aquafaba, and finally the breadcrumbs. Separating the breadcrumbs into two bowls will help keep them dry so they will adhere to the onion rings. So, work with one bowl of breadcrumbs and then about halfway through the coating process, move on to that second bowl of breadcrumbs.

Place the soaked and dry onions in the ziploc bag, seal, and shake to coat the rings. Remove, and dip each ring in the aquafaba (discard any remaining), and next into the breadcrumb mixture. Place rings on the baking sheets. Bake for 15 minutes. After this, rotate the trays from bottom to top and flip the rings. Bake another 10-15 minutes until onion rings get golden and crispy!
